fix(installer): remove --recheck from grub-install to prevent device scan hang

--recheck triggers grub to rescan all block devices. On N100 mini-PCs with
eMMC + NVMe, scanning the eMMC causes grub-install to hang indefinitely.
Device maps are generated fresh on each install so --recheck is redundant.
