chore: repin viperblock to dev with chunk GC on its own goroutine

Picks up viperblock 3dcfbb7 (#49): the chunk GC sweep now runs on a
dedicated goroutine instead of sharing the chunk-uploader select, so
sustained overwrite churn no longer starves GC and wedges the volume at
the internal space cap.
