fix: prevent macOS extended attributes in tarball creation

Add COPYFILE_DISABLE=1 to all rsync operations in create-release.sh to prevent
macOS extended attributes from being included in tarballs. This eliminates the
'Ignoring unknown extended header keyword' warnings during extraction on Linux systems.
