fix: prevent macOS extended attributes in release tarballs

- Add COPYFILE_DISABLE=1 when creating tarballs to prevent macOS extended attributes
- This fixes 'Ignoring unknown extended header keyword' warnings when extracting on Linux
- No changes needed in community scripts - fixes the root cause at source
