Paul Lorenz 5a36030e9b Fix compilation on illumos. Fixes #3482 ...

- constrains the cpu profiler and router signal monitor to `unix` instead of a list of operating
  systems, and turns their windows stubs into `!unix` fallbacks
- replaces the per-OS tproxy and geneve listener stubs with one fallback each, covering every
  operating system without an implementation
- replaces survey with local stdin prompts for the pki pickers, since survey's terminal package does
  not build on solaris or illumos; an exact name takes precedence over a list number
- limits the interactive database explorer to the platforms its prompt library builds on, and
  reports it as unsupported elsewhere
- removes the survey dependency and syncs zititest's go.mod
- tests the pickers
- notes the fix in the changelog
