Julian Sommer b7a932d6b0 ci(e2e-nightly): target dispatched branch on workflow_dispatch ...

GIT_BRANCH was hardcoded to dev, so workflow_dispatch runs ignored the
ref chosen in the UI. Use github.ref_name for dispatch (and any non-cron
trigger), keep dev as the explicit target for scheduled cron runs.
