joshsiv-mulga 3da760c692 ci(e2e-go): wire e2e-single target + add single to build set

Lets the in-progress single-node Go port (mulga-siv-89, Stages A-D
landed) be exercised in CI via explicit `suites: e2e-single` dispatch
input ahead of Stage G flipping the workflow default.

Workflow default suites unchanged until Phase 9 teardown lands.
