Jamie Tanna ea3b7acede test(util/git): add missing coverage of setGitAuthor (#45607) ...

As part of follow-up changes, we're removing the "bot" terminology.

While doing so, GitHub Copilot Code Review discovered that there was no
coverage of the defaults in this function.

Before we change this, we can add coverage of the defaults.
