Jamie Tanna 6a7683b750 ci: correctly generate prefetch matrix cache key ...

As `setup-node` currently uses a hash based on
`hashFiles('pnpm-lock.yaml', 'package.json')`, but we weren't doing the
same here, we would always have a cache miss, and we would need to run
the macOS prefetch, regardless of whether the cache was warm or cold.
