rcourtman 1284a8a5a9 fix: replace embedded changelog script with standalone version 
- Removes complex embedded Node.js script from workflow
- Uses standalone scripts/generate-changelog.js instead
- Avoids bash escaping issues with backticks
- Properly formats markdown with real newlines and backticks
