build: Consolidate dependencies and optimize Dockerfile

Consolidate server dependencies into root package.json.
Refactor Dockerfile to use multi-stage build, build CSS,
run as non-root user, and install production dependencies only.
Update .gitignore and docker-compose.yml build context.
