Resolve ResolutionImpossible error where meet requires redis==6.2.0
but kombu[redis] 5.5.x requires redis<=5.2.1. Downgrade to redis==5.2.1
satisfies overlapping constraints and testing confirms compatibility.
Pin the redis dependency.

This is written in a rush, boostrap the real logic with celery
worker to process meeting recording.
Lack of unit tests is critical, I am not proud of a it. I am
totally in a hurry for the demo. Not sure we will actually keep
this microservice.
