EST RFC 7030 hardening master bundle Phase 12 — comprehensive operator- facing documentation for the Phases 1-11 backend work that shipped on 2026-04-29. The `<NAME>` placeholder convention matches the SCEP idiom so the docs grep doesn't extract per-deploy profile names as phantom env vars. No new env vars introduced — this is a pure docs commit.
