docs: remove open-source competitor comparisons from why-certctl

Keep only paid competitors (CertKit, KeyTalk, Venafi/Keyfactor).
Remove ACME clients, Certimate, CZERTAINLY, cert-manager sections
to avoid driving traffic to free alternatives.
