Oliver Kieselbach 19c4354224 docs: README assets move to .github/assets, drop the architecture link ...

The screenshots and the logo lived in docs/images, which is now a private
submodule and cannot render on the public README. They are README assets
only (no doc page references them), so they move to .github/assets — the
usual home for repository-level images — and leave the docs bundle.
The architecture link pointed into the private docs; the technical
documentation is not part of the public surface any more.
